Food Diary – Week 1
Well, I’ve been very careful about what I have eaten this week. Although I am not a vegetarian, nor do I want to become one, I have tried to eat a few vegetarian meals this week namely, mixed bean tacos and Aloo Palek. Now before people go crazy, I should point out that I make these meals from scratch, no takeaway, ready meals or cook in sauces. These meals aren’t TV dinners, they are healthy home cooked meals.
It takes me about 15 minutes preparation and 15 – 30 minutes cooking time, but of course these meals taste soo much better it is worth it. Also, for me at least, cooking relaxes me, and I find something quite satisfying and relaxing about cutting and preparing vegetables and meat products.
I have really tried to cut back on sugar based products, chocolate, caffeine, cooking oils and eating late in the evening, it is early days yet, but I can’t help but feel that my stomach is a lot happier. As you can kind of tell, there is a lot more coming, I just want to have more days behind me before I start drawing any conclusions…
